Workshop 1 – Carcass Quality and Animal Conditioning

Cost: Free event; $7 lunch prepared by 4-H youth club

Join John Wing of Over the Hill and his staff for an interactive session on carcass quality, animal conditioning, and other meat quality issues. We will look at some beef cows and breakdown a couple hanging sides to assess production and processing factors along with discussing how to achieve quality and consistency throughout the seasons. Troubleshoot with other producers and processors over lunch, prepared by the local 4-H youth club.
